White tea

Cultivated in the mountainous regions of South China, white tea is derived from a rare strain of the tea plant and harvested only a few days a year. After harvest, white tea is neither oxidized nor rolled; it is simply withered and steam dried. Tannins present in its leaves confer antimicrobial and anti-inflammatory properties, while flavonoids and caffeine contribute to its robust antioxidant and lipolytic effects.
